This was a four course South American style pop up evening using recipes from my travels in South America.
Fresh potato empanadas topped with a crunchy egg and Colombian aji (a salsa made especially for empanadas)
Bolivian peanut soup served in the traditional style with pasta then topped off with sweet potato chunks
Fresh trout and prawn ceviche served with deep fried yukka chips (plantain ceviche for the vegetarians)
Tres Leches- a very popular dessert all over South America made using a recipe from Bolivia and adored by everyone at the pop up
